Spicy Chicken with Polenta

So, somehow, I went all of October without cooking anything new?

So, this is number one, the first new thing I've cooked that I can fairly count among the 25 I'll need to reach the second goal of my list.  Spicy Chicken with Polenta, care of My First Kitchen.

The last time I tried a new recipe that I snagged from that site things didn't go perfectly.  So I was careful to watch the heat, this time.  It was a simple recipe, and came with the added bonus of including polenta, which I have never made before.  (I do think I've had it before, though, so I can't cross off "8. Eat something I've never eaten before."  Bummer.)  The polenta was easy, though I may not have whipped it up quite as well as I could or should have.  It seemed a little grainy and not quite as flavorful as I hoped.

It was a good meal for me, though I didn't make any additional sides.  And if I were going to make it again I think I might, even if it is only something as simple as frozen corn.  I was particlarly taken with the chicken marinade, which included lime juice and honey.  So uncomplicated yet delicious!  The extra kick of homemade salsa on top was good, too, and really brought together the Mexican tastes.

It was a good dish to start off the list.  Easy, tasty and still something I might be able to make even better the next time.
