Yesterday, I Made This

For one of my classes this semester we wrote a story cycle. So, to cap off the semester we held a reading, where everyone brought a dish to share and we each read for five minutes. It was a fun night and we had a decent number of people show up to snack and hear us.

I didn't really follow an exact recipe. I browsed a couple online and asked a friend (who had made something similar for another potluck this summer) what she had done. So I just threw together some couscous, olive oil, red wine vinegar, onions, cucumbers, cherry tomatoes and feta cheese in what seemed like appropriate amounts and hoped for the best. I think it was a success. I found it tasty and people ate most of it. I ended up with just enough left over that I can take it to work tomorrow for lunch, too.
